Menemen — the morning that started it all
Menemen is breakfast, but it is also an argument. Onion or no onion? Everyone has a side.
What matters
Low heat. Patience. The eggs should stay glossy, never dry.
- Ripe tomatoes, grated not chopped
- Sivri biber (long green peppers)
- Good butter and a pinch of pul biber
Ingredients · serves 2
Method
- Melt butter, soften the peppers 4–5 min.
- Add grated tomato, simmer until thick.
- Lower heat, pour in eggs, fold gently until just set.
- Finish with pul biber. Eat with bread, immediately.
